Baking with Coconut Sugar - My first Experience

Recently we are witnessing a fad among the ‘millennials & gen z’ fitness enthusiasts turning off their sugar cravings with coconut flavoured sugar. Though it is difficult to take a break from donuts & cakes. Coconut Sugar claims to make it a little healthier with its low glycemic index & nutritional properties. My first impression on purchasing the Natural Coconut Sugar that imitates the texture of sand. I thought it was difficult to handle in the kitchen. 

So, I decided to test it out by baking a simple coconut cookie.
Ingredients
6 tablespoons of butter
1/2 cup of coconut sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Cooking Instructions:

Preheat the oven to 375 degrees, and line a baking sheet with parchment paper.
Beat together the butter, coconut sugar, egg, and vanilla in a bowl. Sprinkle the flour, baking soda and salt on top, and beat until it forms a dough consistency.
Scoop generous tablespoonfuls of the dough onto the prepared baking sheet, and bake for 8-10 minutes, or until the tops of the cookies look dry.
Let cool on the pan for 1 minute, then move to a cooling rack to cool completely.
Serve immediately, or keep covered in a storage container so that they stay soft.

My Thoughts:
After eating the cookies I felt like the cookies had a very smooth coconutty flavour than cookies baked with normal sugar. And plus it was so light in terms of my appetite. Overall it was a great experience. Looking forward to trying coconut sugar with other recipes too.
